The Cafe Phin is a traditional Vietnamese brewing tool that makes a strong and bold cup of coffee!  By design, the Phin filter extracts the delicious flavor from the coffee grounds without the need of a paper filter. How to Brew with the Phin-

  1. Pre-Brew: Heat up your water. Coffee grind size should be medium to medium-coarse. If your brew is ending up too light for your taste, use a finer grind size. If your brew is ending up too strong, use a coarser grind size.
  2. Place the Phin on top of your cup. Scoop 15 grams (approximately 3 tablespoons) of ground coffee into the Brew Chamber.
  3. Pour a half-inch of hot water (~195-200 degrees) into the Brew Chamber. Pause for around 20 seconds to allow the coffee to bloom and let the water permeate the coffee grounds evenly.
  4. Place the Ground Guard on top of the wet grounds, press down firmly so the grounds are tightly packed. The Ground Guard may loosen and float, simply adjust it to the proper position.
  5. Fill the Brew Chamber to the top with hot water (about 4 ounces). Repeat this step again for a total of ~7-8 ounces of coffee. You may place the lid on top after you finish pouring the water into the Brew Chamber. It can take up to 5-10 minutes for the coffee to finish drip brewing.
